What is Brew Dr. Kombucha?

Short Answer: Brew Dr. Kombucha is a fizzy iced tea with gut-friendly benefits!

Long Answer: Brew Dr. Kombucha is a tasty, fizzy probiotic tea that’s slightly sweet, slightly tart, and easy-drinking. It’s made with organic ingredients, is gut friendly, and contains no artificial sweeteners — only the good stuff. It’s a great alternative to soda. 

How is kombucha made?

Tea leaves are fermented with organic cane sugar and a SCOBY (Symbiotic Colony of Bacteria & Yeast). The result is a slightly acidic, lightly carbonated tea beverage with live & active cultures.

Is your kombucha probiotic?

Yes! Our kombucha contains live and active cultures that naturally occur during fermentation – a mix of beneficial bacteria, yeasts, and organic acids. 

How long have people been drinking kombucha?

Kombucha is a fermented tea that has been consumed for over two millennia, growing out of Asia and Eastern Europe.

What does Brew Dr. mean when it says it is “craft brewed?”

We’re tea people. We started making kombucha in a tea house using only the highest-quality organic loose leaf tea. It would be easier to make a large batch of ‘plain’ kombucha with a cheap tea, but we believe in the art behind the flavor. This means we use high-quality organic teas, herbs, botanicals, fruits, and juices in our recipes. If you love the taste of our kombucha compared to a lot of other kombuchas out there, this is the reason!

What’s so special about raw kombucha?

Drinking Brew Dr. Kombucha is a tasty way to incorporate fermented food into your diet. The fermentation process IS what’s so special. Kombucha fermentation creates a mix of naturally occurring live and active cultures, such as: 

- Beneficial bacteria and yeasts (acetic acetobacter, lactobacillus, saccharomyces) that can help populate the gut with healthy flora to aid in digestion 

- Organic acids: acetic acid, lactic acid, propionic acid, glucuronic acid and gluconic acid. These organic acids are known to improve bioavailability of vitamins, prevent accumulation of heavy metals and insoluble oxalates, inhibit pathogenic bacteria, support joint health and modulate immunity.

Is there caffeine In Brew Dr. Kombucha?

There is roughly 15–20 mg of caffeine in most 14 fl oz bottles of Brew Dr. Kombucha — on par with a cup of decaf coffee. Our Iced Tea Lemonade kombucha and Lemon + Tea Sipjoy flavors contain 35mg caffeine per bottle/can.

Is your kombucha raw (unpasteurized?)

Yes! This preserves all of the naturally occurring live and active cultures.

What’s the deal with sugar and kombucha?

We’re so glad you asked! In order for fermentation to occur, there must be three elements: 
- Tea (made from tea leaves and water) 
- Specific yeast and bacteria (called SCOBY) 
- Sugar (we use raw, organic, cane sugar) 

The sugar feeds the yeast and bacteria, aiding in its growth. Without sugar, you have no yeast and bacteria. Without yeast and bacteria, you have no kombucha. So in short, yes, there is sugar added to kombucha, but it's what makes it, well, kombucha!

You will never find artificial sweeteners in our kombucha. These can be harmful to the health of the SCOBY and disrupt gut health. 

What does "Added Sugar" mean?

When you see "Added Sugar" on a nutritional label simply means that the sugar is not naturally occurring, as it would be for (for example) fruit. On our case, we add raw organic cane sugar prior to fermentation. For some of our fruitier flavors, we also add some organic fruit juice or fruit puree post-fermentation.

The only time we add sugar post-fermentation is when a batch of kombucha doesn't meet our standard specifications for sugar content. In those rare cases, we might add a little bit of sugar to ensure our product is consistent from batch to batch.

Is Brew Dr. Kombucha organic? How about non-GMO? Gluten free?

Yes, yes and yes! All of our flavors are USDA Certified Organic, non-GMO, gluten free, vegan, and kosher. 

Does kombucha contain alcohol?

Good question! All fermentation produces alcohol. However, we utilize a method of non-heat distillation to gently remove alcohol from our ‘booch without harming the live and active cultures inside. This makes our product safe for all ages to enjoy. The excess alcohol is gently removed and repurposed for ethanol.

What are organic essences?

Organic essences are concentrated extracts – super-concentrated juices in simple terms – made from fruits, flowers, and other plants. They retain the aroma and other properties of their base organic ingredients and are used to enhance aroma and flavor.

Here are the flavors that contain organic essences:
Berry Ginger (Blackberry Trails) - strawberry essence
Cherry Limeade - dark sweet cherry essence, grape essence
Crisp Apple - apple essence
Island Mango - strawberry essence

What are the differences between organic essences and natural flavors?

Sometimes there is confusion between essences and natural flavors, so let's clear it up, natural flavors can be made up of any combination of naturally-derived or synthesized ingredients and may not even contain any components of the named flavor (e.g. strawberry natural flavor may not actually contain any strawberry compounds), whereas essences ONLY contain the named ingredient, so you know what you're getting.

That's why we have always used organic fruit essences and stayed away from natural flavors in our "no nonsense" commitment to making raw, real kombucha.

Should I keep my Brew Dr. Kombucha cold?

Yes, please! Brew Dr. Kombucha must be kept in the fridge. If unrefrigerated, raw kombucha will continue to ferment in the bottle or can. This can create more carbonation, and in extreme cases, the bottle or can may burst.

What's the story behind the Iced Tea?

Before we were Brew Dr. Kombucha, we were Townshend’s Teahouse in Portland, Oregon — a cozy spot where we brewed hundreds of different tea varieties for our guests. Crafting delicious tea has been our passion since day one, and now we’re bringing that same love and care to our new sparkling Iced Tea. It’s a refreshing way to share our tea heritage with more people, while keeping things light, flavorful, and real.

Is this a kombucha?

Do I need to keep it refrigerated?

Yes, it has to be kept refrigerated. We use real ingredients, and out of refrigeration these Iced Teas will become unpleasant tasting, and then liquid may fizz or burst out of the can. 

What is it sweetened with?

5g of sugar and a little bit of organic stevia.

Why do you use organic stevia in your products?

Organic stevia is a natural, plant-based sweetener that elevates the flavors in our iced tea without a ton of added sugar.

Organic stevia is grown without synthetic pesticides or fertilizers and is often less processed, while regular stevia may use conventional farming and more processing.

What strain of probiotics is in this, and what count?

Our Iced Tea products have the benefits of probiotic Bacillus subtilis. Bacillus subtilis is a spore-forming non-GMO probiotic that supports gastrointestinal health. Studies have shown it may reduce bloating and abdominal discomfort. As with any live product, the number of probiotic cultures in each can will naturally fluctuate.

How much caffeine is in this product?

Each 12oz can contains 25mg of caffeine. For reference, a cup of decaf coffee has about 15mg, and drip coffee about 90mg.

Why is it carbonated?

We add just enough light sparkle to our iced teas to make every sip more fun, refreshing, and flavorful. The bubbles lift and brighten the natural tea notes, letting each ingredient shine while giving you a crisp, fizzy finish.
